My Heart Beats For Sweet Potato Fries.


I first discovered sweet potato fries while on a family trip to California this past February. We went to a restaurant and they came with my meal. Yum. YUm. YUM. YUMAH! When I came back to Utah I tried to find them everywhere and they seemed to be an unheard of commodity here. But as time has passed they have become more and more popular. I've tried making them at home but haven't always been to pleased with the results. Until now.... But I came across a recipie that absolutley suits my fancy. I've made them for the past three nights in a row and I gobble the whole tray up cause my hubby doesn't like em, so more for me! And the best part, they are almost completely void of fat. I shall share...

Baked Sweet Potato Fries
*PreHeat Oven to 400
*Chop sweet potato into something resembling the shape of a fry
*Place in gallon Ziplock Bags along with two tablespoons of EVOO and a Tablespoon 
  of McCormick Grill Mates Monterey Steak Seasoning
*Shake what your mama gave you, and shake the bag while you're at it, until fries are    covered
*Spread out on lightly "Pammed", yes it's a word, cookie sheet and bake for 15-20 min  turning fries once
*Enjoy. Then call me and tell me how much I have blessed your life by sharing this  recipie

Yum! I love sweet potato fries. However, I do NOT remember you ever eating them during the family trip this past February. And, if you had asked, I would have told you that you can get them at Rumbi, which has been serving them for the past several years in Utah. I shall try this recipe, though I have discovered a nice HUGE bag of them at Costco, so I now have a bag of them residing in my freezer until such a night as I remember they are there and plan a meal to serve them with. LOL

The Counter Restaurant at the Gateway serves sweet potato fries. I'm not kidding either. They're delicious.
